Three Commitments to Fresh Noodles

Founded in 1912, Masuda Rinzo, the founder, has been sincerely making noodles in Saitama, a major wheat-producing region.

Starting with making Japanese noodles (fresh udon and soba), the company has been making fresh noodles for over 100 years. Saitama Bussan will continue to focus on fresh ramen, pouring its commitment to wheat and water and cultivated craftsmanship into the making of “fresh ramen” to deliver deliciousness.

In order to not forget the Japanese spirit of making fresh noodles since the company’s founding, the magnificent cherry blossom tree that was in front of the noodle factory is used as the motif for Saitama Bussan.

Commitment to raw materials and formulations

The taste of noodles is the taste of wheat. That’s why we take our noodles seriously.

Blending is key to bringing out the flavor of the ingredients.
We have prepared 10 carefully selected varieties, carefully examining the origins and characteristics of wheat. By combining wheat that goes well with each other, we bring out the natural flavor of the ingredients to the fullest.

Wheat flavor and color. Smoothness. Chewy texture. The original flavor of the ingredients.
We avoid unnecessary things such as preservatives and additives as much as possible, and the expiration date is a little short at around 20 days, but we continue to focus on this because we believe that noodles that are gentle on the body and allow you to taste the natural flavor of wheat are the “origin of noodles.”

Fresh noodles are made by hand by artisans with techniques cultivated over more than 100 years.
The inherited methods remain unchanged from the past, and involve careful, time-consuming adjustment of selected ingredients to suit the changing environment of the day. We pursue a taste that remains unchanged throughout the year.

When making fresh noodles, temperature and humidity determine the quality.
We are committed to making fresh noodles, strictly controlling temperature and humidity, and in order to maintain a dry environment, we deliberately do not make boiled or steamed noodles.
