Made with carefully selected large whole soybeans and 20% more “Jun Koji” (Pure malt) from Kojiya Saburouemon than usual, and “Hakata no shio” salt, this red miso is fermented and aged for 18 months in a wooden barrel.
This red miso has a fragrant, delicate flavor and high-quality umami that evokes the morning mist of a modern city.

Kojiya Saburouemon’s miso is additive-free and naturally fermented, using only carefully selected domestic ingredients, and is a Japanese miso spun by artisans by hand.
